Plum trees often produce vast amounts of plums and the eating time is limited. Our plum and crumble recipe is an ideal way to use up some of the excess.

If you can't make this recipe when plums are in season then freeze them and make this recipe later in the year. The honey and almonds compliment the delicious plum flavour.

Ingredient

How Much

THE FILLING  
Plums 900g / 2lb
Honey 150ml / 5fl ozs
Medium sized orange 1
   
THE CRUMBLE TOPPING  
Butter 115g / 4oz
Plain flour 115g / 4oz
Ground almonds 85g / 3oz
Light brown sugar 80g / 3oz

PREPARATION

Preheat the oven to 200°C - 400°F (fan 180°C - 350°F) - Gas Mark 6.

Chop the butter into small cubes.

Cut the plums into halves and remove the stones

Grate the zest off the orange (keep the orange).

RECIPE INSTRUCTIONS
1. Add the plums, 5 tablespoons of water, the orange zest and the juice of the orange to a pan on a medium heat. Bring the mixture to a boil then turn the heat down and simmer on a low heat for 15 minutes. Turn the mixture with a spoon every five minutes to ensure it does not stick to the pan.
2. While the plums are cooking, add the butter, flour and sugar to a bowl and rub the crumble mixture together with your fingers. After four or five minutes the mixture will form into crumbs. Add the ground almonds and mix them in as well for a minute or so.
3. When the plums are cooked pour the mixture into the pie dish and spread the crumble mixture evenly over the surface of the plums. Cook in the pre-heated oven for 35 minutes until the crumble topping is a light brown colour. Serve hot or cold with ice cream, custard or cream.
