Gooseberry Crumble

Gooseberries are a fruit that aren't used in cooking recipes enough. When baked in the oven their texture is delicious and they have a unique sweet and sour taste when sprinkled with sugar.

Gooseberries are now available in supermarkets year round but the best will be those grown in your own garden. Our favourite variety is Hinnomaki Red. Disease resistant, with lots of red, juicy and sweet fruit they are ideal fresh or frozen.

YOUR CHOICE OF GOOSEBERRY CRUMBLE TOPPING
For this gooseberry crumble recipe we have chose a crumble topping which has some porridge oats (rolled oats) added to the crumble mixture. These add an earthy flavour and a great chewy and crunchy texture. If you wish to use a different crumble topping then simply select one from the drop down box below and then click the "SELECT A TOPPING BOX". The recipe will automatically change to include your chosen topping. Your choice of crumble topping will then appear in every recipe in this site.

THE FILLING  
Gooseberries (frozen or fresh) 500g / 1lb 2oz
Sugar 2½ tablespoons
   
THE CLASSIC CRUMBLE  
Self-raising flour 280g / 10oz
Brown or white sugar 140g / 5oz
Cooking margarine 140g / 5oz

PREPARATION
Preheat
the oven to 180°C - 350°F - Gas Mark 4.

RECIPE INSTRUCTIONS
1. Place the cooking margarine and flour into a largish bowl and blend them together. We found it easiest to use hands but a fork or food blender does the job as well. Continue mixing until it forms mainly evenly sized crumbs. This takes 3 to 5 minutes.
Add the sugar and blend that in as well. This will make the mixture even more crumbly.

2. Spread the gooseberries into the base of an oven proof dish. They should be about two thirds the depth of the dish. If they are uneven, squash them down a bit before adding the crumble topping.

Sprinkle over the oat crumble topping and smooth level to the dish top with a knife. Place in the pre-heated oven for 40 minutes until the crumble topping has browned.

Gooseberry crumble can be served immediately when hot. It is also delicious served cold from the fridge with cream or custard.
