Apple Crisp

Apple crisps are the American equivalent to the the British apple crumble. They are really a variant on the original apple crumble recipe with slightly more margarine / butter and sugar.

As with the apple crumble recipes (see red tab at top of the page), various fruits can be used instead of simply apples. Rhubarb and raspberries are excellent alternatives. Cream, ice cream or custard are superb toppings for this recipe and the apple crisp can be eaten hot or cold.

HOW MANY SERVINGS Four servings
TIME TO PREPARE 15 minutes
COOKING TIME 35 minutes
WILL IT FREEZE? Yes

INGREDIENTS
Any variety of apple can be used for this recipe but we recommend using cooking apples. Use a local variety if at all possible.

Ingredient

How Much

THE FILLING
Cooking apples (4 medium) 900g / 2lbs
White or brown sugar 1 tablespoon

THE CRISP TOPPING
Brown sugar 150g / 5¼oz /  ¾ cup
Plain flour 55g / 2oz / ½ cup
Rolled oats (porridge oats are good) 45g / 1½oz / ½ cup
Cooking margarine / butter 80g / 3oz / third cup

PREPARATION
If using butter then take it out of the fridge and chop into chunks and allow to warm up a little.
Turn the oven on now to 190°C - 375°F - Gas Mark 5.
Peel the apples, cut them into quarters, remove the core then cut each quarter into six or eight slices. Each slice will break down when cooked so it's not too important to get them equal sized.

RECIPE INSTRUCTIONS
1. Place all the Crisp ingredients into a largish bowl and rub them together with your finger tips.

As the ingredients are mixed they will start to form crumbs. It will take around five minutes until all the ingredients are mixed.

Crisp mixture

2. Place the sliced apples in the base of an oven proof dish. Approximately two thirds apples to two thirds crisp mixture is the ideal.

Sprinkle tablespoon of sugar over the apples and then sprinkle the crisp mixture over the apples. Pile it high because the apples reduce in size as they cook. Place in the pre-heated oven for 35 minutes.
